A refreshing dessert summer or winter that's low in fat and calories. A great alternative to ice cream, try topping it with fresh berries, of use in your favourite smoothie.

ingredients

  • 1 (410g) tin pear halves
  • 500g (1 1/4 lb) vanilla yoghurt
  • 4 tablespoons caster sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice

preparation method

  1.   Drain pears, reserving 125ml (4 fl oz) of juice. Purée pears in food processor or blender.
  2.   Combine pears, reserved juice, yoghurt, sugar, cinnamon and allspice in canister of ice cream maker. Freeze according to manufacturer's directions.

    Good base flavours. You can at least partially prevent the rock-hard freezing problem by adding alcohol (1 or 2 oz) to the mix before putting it in the machine. Vodka won't add any taste, or you could add pear liqueur, or a complementary flavour of some other kind. Most all of my ice cream recipes have a little alcohol in them (since I rarely use enough fat or sugar to keep the creaminess level high), in the form of rum or vodka. It works wonders.

    Fabulous flavour! I made mine with pears in light syrup and low sugar, fat-free yoghurt. I was very pleased with the results as were my guests. Will definitely be making this again.
