Coconut Cake

This is a tasty recipe which i think will add zest to your day. DO ENJOY!!

ingredients

  • 200g (8oz) flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 75g (3oz) butter
  • 75g (3oz) sugar
  • 50g (2oz) desiccated coconut
  • 1/2 teaspoon grated lime zest
  • 1 egg
  • 125ml milk
  • 1 teaspoon vanilla extract

preparation method

  1.   Sift flour, salt and baking powder together into a bowl.
  2.   Rub in the butter until mixture looks like fine breadcrumbs.
  3.   Add sugar, coconut and lime rind.
  4.   Beat egg and add most of the milk and vanilla.
  5.   Make a well in centre of flour mixture. Add liquid and mix well to form a stiff cosistency, adding more milk if necessary.
  6.   Place in a greased 15cm (6 inch) cake tin and bake at 180 degrees C /gas mark 4 for 40 minutes, or until a knife inserted in the middle comes out clean.
  7.   Remove cake from pan and cool on wire rack.
