Simple and quick to prepare. Mange-tout are quickly stir-fried with spring onions and garlic, and tossed with fresh mint leaves. Wonderful blend of spring garden vegetables. Serve hot or at room temperature.

ingredients

  • 1 dessertspoon olive oil
  • 350g (12 oz) mange-tout or sugar snap peas, trimmed
  • 3 spring onions, chopped
  • 1 clove garlic, chopped
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon chopped fresh mint

preparation method

  1.   Heat oil in a large frying pan or wok over medium heat. Add the mange-tout, spring onion and garlic. Season with salt and pepper. Stir-fry for 4 minutes, then remove from heat and stir in the mint leaves.
