Linguine with Broccoli and Red Pepper

This simple midweek supper is colourful, healthy and delicious. Great for families looking to give up meat every night of the week!

ingredients

  • 1 (500g) pack linguine pasta
  • 500g (1 1/4 lb) fresh broccoli, chopped
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 red pepper, thinly sliced
  • grated Parmesan cheese to serve

preparation method

  1.   Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2.   Steam broccoli with 2 tablespoons water in microwave for 6 to 7 minutes.
  3.   In a large frying pan, heat olive oil and butter over low heat. Stir in garlic (more or less to suit your taste) and red pepper slices; sauté gently.
  4.   Drain broccoli and add to frying pan and sauté broccoli and peppers until soft.
  5.   Toss vegetable mixture with hot pasta. Sprinkle with Parmesan cheese.

    Very tasty! I found that a whole pcak of Linguine was too much for the sauce/vegetables. I recommend only cooking half the apcket or else doubling the rest. I used half and it came out very nice.

    Loved it, my daughter & I ate most of it ourselves. It figures that on the day I go to get red peppers ...they have none. I used 1 yellow & 1 green pepper, it looked wonderful! I did use double olive oil, YUM!

    Great dish! I made it low fat by omitting the butter and using less oil. I would also recommend either doubling the veggies, or cutting the pasta amount in half. Thanks for the recipe!
