Baked Apples in Pastry

This is a very old baked apple dumpling recipe but it is so easy. Serve hot or cold with custard or ice cream.

ingredients

  • 225g (8oz) ready-made shortcrust pastry
  • 4 small cooking apples, peeled and cored but not sliced
  • 25g (1 oz) sultanas
  • 25g (1 oz) light soft brown sugar
  • 25g (1 oz) butter
  • 1/4 teaspoon ground cinnamon

preparation method

  1.   Preheat oven to 220 degrees C /Gas mark 7.
  2.   Roll out the pastry on a floured surface and cut four circles round a saucer.
  3.   Place one apple in the centre of each piece of pastry.
  4.   Mix together the sultanas, sugar, butter and cinnamon and place equal amonuts in the centre of each apple.
  5.   Enclose the apples completely in pastry and invert onto a baking sheet.
  6.   Brush the top of the pastry with egg or milk and bake for twenty-five minutes. Sprinkle with caster sugar as they come out of the oven.
