A simple way to use up leftover chicken, as well as leftover rice.

ingredients

  • 375g (13 oz) uncooked white rice
  • 1 knob butter
  • 2 skinless, boneless chicken breast fillets - diced
  • salt to taste
  • 2 eggs, beaten
  • 75g (2 oz) mushrooms, sliced
  • 2 spring onions, chopped
  • 1 tablespoon soy sauce, or to taste

preparation method

  1.   Cook rice according to package instructions. Let cool. (Or use leftover rice straight from the refrigerator.)
  2.   Heat butter in a large frying pan over medium-high heat. Brown chicken in butter and season with salt to taste. Set chicken aside.
  3.   In the same frying pan, scramble the eggs. Add the rice once the eggs are fully cooked, stirring to brown. Add chicken, mushrooms, spring onions, eggs and soy sauce to taste.
