Black Bean and Sweetcorn Salsa

Light and fresh, crunchy and slightly sweet, this can be served as a salad or a salsa. It's a tasty combination of black turtle beans, roasted red peppers, fresh green peppers, red onion and corn.

ingredients

  • 3 (400g) tins black beans, rinsed and drained
  • 4 (340g) tins sweetcorn, drained
  • 1/2 red onion, diced
  • 2 green peppers, diced
  • 200g (7 oz) jarred roasted red peppers, drained and diced
  • 5 tablespoons red wine vinegar
  • 5 tablespoons olive oil

preparation method

  1.   In a large bowl, mix together all ingredients and toss to coat thoroughly.

Tip:

Black turtle beans, or simply 'black beans' for short, are especially common in Latin American cuisine. High in fibre and packed with nutrients, they're a healthy addition to any dish. If you can't find tinned black beans, use dried.

    Used different ingredients:

    Great with barbecued beef. You can also use tinned kidney or pinto beans. I like to add sliced spring onion and a pinch of chilli powder just before serving.

    I found this recipe to be quick easy and delicious. I also found that frozen sweetcorn can be used and is equally good.
