Chicken, Pineapple and Peppadew™ Kebabs

Chunks of chicken are marinated in pineapple juice and Peppadew™ Piquanté Pepper Brine, skewered with Peppadew™ Sweet Piquanté Peppers and pineapple pieces, then grilled or barbecued. Perfect for a summer evening! Serve with lime wedges.

ingredients

  • For the marinade:
  • 250ml pineapple juice
  • Juice of 3 limes
  • 45ml olive oil
  • 45g brown sugar
  • 1 tbsp Peppadew™ Piquanté Pepper brine (juice)
  • salt and freshly ground black pepper to taste
  • 3-4 spring onions, roughly chopped


  • 6 chicken breast fillets, cut into 2.5cm cubes
  • 1 pineapple, peeled and cored, cut into bite-size chunks
  • 1 x 420g bottle Peppadew™ Sweet Piquanté Peppers, drained
  • Lime wedges for serving

preparation method

  1.   Mix the pineapple juice, lime juice, olive oil, Peppadew™ Piquanté Pepper brine and brown sugar together in a bowl. Add the spring onions and mix well. Add the chicken to the mixture, toss well to coat. Marinate for 2 hours, turning twice.
  2.   Thread chicken, pineapple and Peppadew™ Sweet Piquanté Peppers onto skewers.
  3.   Grill under a preheated grill or over moderate coals for 12-15 minutes or until chicken is cooked and pineapple lightly charred.
  4.   Remove from heat and serve with wedges of lime.

    I almost hate to say this as I'm not usually a fan of promotional recipes but, since discovering Peppadew a few months back, I've got nothing but praise for them. This recipe, like a lot on their website, is spot on and both simple and tasty.
