The unique thing about this cheesecake recipe is that it is made in a pressure cooker. Because this cake improves with time, make it the day before. If desired, garnish with icing sugar or whipped cream and sliced strawberries.

This beef stew was made for us when we were just infants; my mum used to put it in the blender for us. To this day it reminds me of home. The pressure cooker makes the meat fall-apart tender and cooks it in just 20 minutes.

This recipe was given to me by my mum, but I've tweaked it a bit. It's an old family favourite and a great soup for an autumn day. Made in a pressure cooker, it takes only 20 minutes for a full, hearty meal. This soup also freezes beautifully.

Mensaf is the national dish of Jordan. It is made on special occasions and traditionally eaten with your hands. It's hard to find the whey needed to make 'real' mensaf. It comes in a rocklike form and is diluted and used in place of the jameed in this recipe. Even without it, this recipe comes close to the real thing. Spices, onions, garlic and butter can also be added to season the goat milk sauce.

This is a brilliant solution when you've dropped anchor and are surrounded by friendly boaties just waiting for a newcomer to go visit ... and the aroma from your galley will have them rowing across in no time! Be diligent about shaking the pot, as below, to prevent sticking. Ingredients aren't always easy to come by in out-of-the-way sailing spots, so do this with whatever meat you can!

I love soups especially in the winter. I also love my pressure cooker because it saves time, fuel and nutrients. I was looking for a hearty soup that included leeks and I cast around my kitchen for ingredients. There were plenty of potatoes and leeks so that was my starting point. This is almost a meal in a dish and my family all love it. It is virtually fat freeand low in salt.
