A great rendition of the old-fashioned filling that's normally steamed in a pudding. This is my version which has tomato passata and red wine in it, which gives it a fantastic flavour. If you can't find it pre-packed, ask your local butcher for a mix of steak and kidney.

Pork fillet, red-wine, mushrooms and cream. You can't go wrong with this dish. Its moreish, homely and yet classy. A favourite dinner-party casserole of mine. Serve with plain boiled basmati rice and green veg or a salad.

A true Irish dish which has been enjoyed for many a year by all Dublin people, soon to be enjoyed by your family over and over again! This is the bare bones traditional recipe but feel free to add garlic, a bay leaf or other fresh herbs for flavour. It's also good if you replace the water with cider.

This is extremely spicy dish and very popular in South East Asia, especially in Singapore, Malaysia and the Phillipines. There are many variations to this traditional dish, and I'll try to be as close to the real thing as I can with my version. Don't worry, you can easily get the ingredients at any Asian supermarket. Serve with white rice and a big smile.

A delicious simple soup without too much heat, excellent as a wintery starter to a dinner party. The spice works wonderfully with the sweetness of the parsnips. Serve with crusty white bread.

Pelau is a stew from Trinidad made with either beef or chicken. The unique flavour comes from searing the meat in caramelised sugar then simmering with rice, coconut milk and peas. Serve accompanied with slices of tomato, avocadoes or cucumber.
